Marti/Deb's Chocolate Pudding Cake

So, having received my box of chocolate pudding, (thank you Deb!) and my kitchen being workable in, I decided to have a go at making the cakes.

I gathered all the ingredients and Penny's box of muffin cases and her 'cup' measures (please excuse the untiled wall behind - we haven't put up the tiles yet!).
The pudding mix was added to the milk and brought up to the boil, stirring all the time - it is a cross between custard and blancmange.
Once it had come to the boil I removed it from the heat and added a chocolate sponge mix and stirred well.
It went very thick and I was a little worried at this point that it might be a disaster! Was English cake mix different from American cake mix?
I spooned the mix into the muffin cases and added the walnuts and chocolate chips. As I had a bit of mix left over I dug out 4 of Penny's pretty pink silicone cases and used them.
Then, into my new oven! The first things to be baked in it! I was very excited and sat on the floor watching them through the door (yes, I know it is a little sad!). They rose beautifully.
And this is an Instagram I posted once they had come out of the oven. Hugh, Penny and I ate one each once they had cooled and the rest went into work. My colleagues loved them! I need to find out if chocolate blancmange mix will work - an interesting experiment to try I think! If it doesn't work, I have found a UK supplier, although it isn't cheap! If you want to have a go yourself, you can find it here. However, I will have a go with blancmange and let you know how they turn out!

Once again, thank you so much Deb for sending me the box of pudding mix and for posting the recipe. I loved that you wrote out the recipe for me and I have now stuck it into my recipe book where family recipes go. This is going to be a favourite :)

I think either lidless or aldi do a blaming e type mixture that you heat. If you can find that it may be a good substitute. Sorry not to be more specific one of the kids brought it in to school. I would probably plump for aldi x

I'm so glad you enjoyed them, Becky, and I love that these are the first things to be baked in your new oven/kitchen! I guess I should have mentioned about the batter being very thick and sticky! Haha - mine do the same thing. :o)

{and my mom would be so pleased that you mentioned her!} xo
